Cajun Chicken Pasta

Ingredients:
For the chicken:
2 boneless, skinless chicken breasts
1 tbsp Cajun seasoning
1 tbsp olive oil
For the pasta:
8 oz fettuccine or penne pasta
1 tbsp butter
1 tbsp olive oil
1 bell pepper (red or yellow), sliced
1/2 red onion, sliced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt & black pepper to taste
Extra Cajun seasoning (to taste)
Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to package directions. Drain and set aside.
2. Season the chicken breasts on both sides with Cajun seasoning.
3. In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook 4–5 minutes per side, or until fully cooked and browned. Remove, let rest a few minutes, then slice.
4. In the same skillet, add butter and olive oil. Sauté bell peppers and red onion for 3–4 minutes, until softened. Add garlic and cook another 30 seconds.
5. Pour in the heavy cream and chicken broth, stirring to deglaze the pan. Let simmer for 2–3 minutes.
6. Stir in Parmesan cheese, season with salt, pepper, and a bit more Cajun seasoning if you like extra spice.
7. Add the cooked pasta and sliced chicken to the skillet. Toss until everything is coated in the sauce and heated through.
8. Garnish with fresh parsley and a sprinkle of Parmesan. Serve hot!
